Apple And Banana Muffins

PREP TIME: 15 minutes
COOKING TIME: 30-35 minutes

Ingredients:
- 1 cup Healthy Life dates, pitted and
  roughly chopped
- ½ cup honey
- ½ tsp bicarbonate soda
- 2 green apples, grated
- 3 small ripe bananas, mashed
- 2 oranges (zest and juice)
- 3 cups whole meal flour,
   sifted
- 50g Healthy Life Walnuts, chopped

Method:

1- Preheat the oven to 180oC.

Lightly grease a 12-hole muffin tin with Healthy Life Olive Oil. Put the dates, honey and bicarbonate soda in a saucepan and stir over medium heat until well combined. Bring to the boil.
3- Remove from the heat and set aside to cool.
4- Transfer the date mixture to a mixing bowl and add the apples, banana, orange zest and juice, mix well.
5- Fold through the whole meal flour and walnuts. Spoon the mixture into the prepared muffin tin.
6- Bake for 30-35 minutes. Cool before turning out onto a cooling tray.
7- Wrap in foil for school lunch boxes or as an after school snack.
