Ingredients:
- 250g Natural Alternative Pasta Shells
- 175g jar marinated feta cheese
- 100g pancetta or bacon chopped
- 200g Healthy Life Lentils, boiled, drained, rinsed
- 1 small red onion sliced thinly
- 1 small red capsicum
- ½ cup basil leaves, torn
- 1 tablespoon sherry vinegar
- ½ tablespoon Dijon mustard
Method:
1- Drain feta reserving 70 ml oil.
2- Cook pasta until tender. Drain and transfer to a bowl.
3- Add 1 tablespoon reserved oil. Toss to combine.
4- Heat a frying pan over medium heat, add onion, capsicum, pancetta and cook, stirring often, for 4 minutes. Remove from heat.
5- Add lentils, basil and feta to pasta.
6- Place remaining oil, vinegar, and mustard in a jug. Season with salt and pepper and stir to combine.
7- Pour over pasta and toss to combine.
