Traditional Christmas Pudding

Christmas PuddingIngredients:
- Butter for greasing
- 375g Healthy Life Raisins
- 200g Healthy Life Sultanas
- 200g Healthy Life Currants
- 200g Healthy Life Prunes
- 300g Glacé Fruit
- 3/4 cup brandy
- 1 tbsp treacle
- 2 tsp vanilla essence
- 1 cup dark brown sugar
- 4 eggs, lightly beaten
- 250g unsalted butter, grated
- 1 1/2 cups plain flour
- 1/2 cup self-raising flour
- 2 tsp ground cinnamon
- 2 tsp ground nutmeg
- 2 tsp ground mixed spice

Method:
1. Grease 10 coffee cups with melted butter and line the bases with baking paper.
2. Place the fruit into a large mixing bowl, add the brandy, treacle and vanilla essence then mix well to combine.
3. Add the sugar, eggs and butter, stir with a wooden spoon to combine.
4. Sift the flours and spices a couple of times onto a sheet of baking paper. Add to the fruit and stir until well combined.
5. Divide the mixture evenly into 10 coffee cup moulds. Cover each pudding with baking paper first and then aluminium foil.
6. Place the moulds on a baking dish and pour in enough water to come halfway up the sides of the moulds.
7. Cook in an oven at 160°C for 1 1/2 hours. Do not let the puddings boil dry - replenish the boiling water as the puddings are cooked.
8. When cooked, remove from water and allow to cool.
