Ingredients:
- 450g butter or margarine
- 1 cup organic raw sugar
- 2 tablespoons treacle
- 8 free range eggs, beaten
- 1 cup organic brown sugar
- 1/2 tsp Healthy Life Celtic Sea Salt
- 1 tsp spice
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla
- 450g Healthy Life Sultanas
- 450g Healthy Life Raisins
- 450g Healthy Life Mixed Fruit
- 450g Healthy Life Dates
- 4 cups of spelt or wholemeal Flour
- 1/2 tsp aluminium free bi carb soda
- Rum or brandy to suit your taste and extra to brush on the cake after it is cool
Method:
1. Line a 23cm round or 20cm square cake tin*.
2. Mix together butter and sugar. Add the treacle, spices and vanilla.

Add beaten eggs and then add fruit.
4.
Add the flour, baking soda and celtic sea salt.
5.
Add some rum or brandy (to your own taste).

Place mixture in the lined cake tine.
7. Cook in moderate oven (180°C ) for 1 hour, then in a slow oven (150°C) for 2 1/2 hours.

Let cool and brush the top with some extra rum or brandy.
*To line the tin: Lightly grease the tin with melted butter or a mild flavoured vegetable oil. This keeps the paper in place. Cut a double layer of paper into a strip long enough to fit around the outside of the tin and tall enough to come 5cm above the edge of the cake tin. Fold down a cuff about 2cm deep along the length of the strip, along the folded edges. Make diagonal cuts up to the fold line on each strip about 1 cm apart. Fit the strip around the inside of the tin, with the cuts on the base, pressing the cuts out at right angles so they sit flat around the base.
Place the cake tin on a doubled piece of baking paper and draw around the edge. Cut it out and place on the base of the tin, over the cuts of the lining.
